Vinification : The hand-picked grapes are de-stemmed and it is cooled to a lower temperature at 5 degrees to ensure that the fermentation process does not begin then leaving it to macerate in the cold for 12/24 hours so that the skins in contact with the must release the quantity of desired color. After which the classic pressing takes place.
